How to be consistent in what you do?

I want to know what is the psychology behind consistency. Why are some people consistent while others are not, no matter how much they try?

I would say that being consistent comes with being disciplined. In addition, you must consider external and internal factors such as motivation, resources available, goals and mindset. Many people who are consistent tend to have a plan as well as motivation to achieve a certain goal. Whereas someone who is lacks consistency tends to lack motivation, a plan or being disciplined. I am not a psychologist, but had plenty of trouble with being consistent as I ventured into determining a career. Consistency is something that comes from social influences but, most importantly, internal influences. Because our brain is wired not to like incongruency, we strive to make decisions that match our past behaviors and our self-image of ourselves. But for me, even at college age, I struggled to find my passion, who I wanted to be, what I wanted to do, and how I wanted to get there. This caused me to do a lot of degree and job hopping from hopeful Neurologist to Teacher to Instructional Designer and now a Consultant of Instructional Design and Accessibility.

The best advice is that an inability to be consistent, in my experience, was just proof that I was still learning about who I was. But through those various career paths and challenges I slowly started learning personally and professionally what I wanted from life. I found a love for rescuing and fostering dogs (which I now do consistently on Thursdays), enjoyed hiking (so I travel with an RV for my vacations), struggled in college after a hit to the head (discovered what accessibility really meant), and from that found my passion.

Don't see it as a sign that you are unable to be consistent; instead, view it as a journey you are taking to learn who you want to be. Take a moment to reflect on what you liked so far and are passionate about, and start there.
