find publishing houses (No house is too small) and send them an email asking if you can inter there. It doesn't have to be for fiction necessarily. Look for publishers who focus on journals, local interest, etc. If you live somewhere with a local news paper, reach out tot hem. If you live anywhere with a local or regional magazine, give them a call.

As for finding local internships, I recommend Googling your community to see what is out there. My first writing position came when I was a junior in college and I asked to speak with the editor. I was hired when I stated, I understand Emily Dickinson started out in journalism and I would like to give it a try.
I would just urge you to be authentic. I have freelanced all my life, but my family always came first, and I substitute taught to supplement the income. I never earned enough to make a living off of either one, but I enjoyed the experience.
You can find full-time employment through technical writing, which I would recommend if you needed the income.
I should tell you most of my employers became my lifelong friends.
