I have been looking for various colleges to apply to complete an bachelors degree in Electrical engineering, and I have noticed that many colleges mention that they are ABET accredited. How important is an ABET accreditation, when it come to finding a job?

Hi Diana,
Definitely attend a school that is ABET-accredited. It tells an employer that you come from a strong program with high standards. Honestly, I don't even understand why schools/departments/programs that are not accredited are even a thing. If, as an employer, I had the choice between a candidate from an accredited program and a non-accredited program, I would pick the accredited one.
Departments go through substantial efforts to have their program accredited. They would not spend the hours to produce tons of paperwork and have an evaluation team on campus to scrutinize everything they do if it was not important.
