In order to learn authentic Italian cuisine should I take a short term course in Italy or should I try to get an unpaid apprenticeship if in the field?

I have worked in this industry for over ten years but in various cuisines like Indian, Chinese, Arabic and lastly in Italian cuisine. Among these, I love to work with Italian cuisine and I’m very much passionate about it. I would love to become a professional chef who specializes in Italian cooking. I have done a one-year diploma course in professional cookery level 2 and I have basic knowledge of Italian cuisine. I'm also currently working in an Italian restaurant as a cooker so this is my story. Note: this question was asked anonymously by a student
