I need a visual organisation platform?

Hey, so I need a visual organisation platform that is not AI or where I can at least avoid the AI as a digital and traditional artist I'm strongly anti-AI. I also can not spend Money at this time and I do tend to struggle with pay walls but I can deal with them. I'm also looking for something that would be helpful in design as I'm looking for a platform for game design classes and practice. I would love some help finding a good platform!
