Whether you will be spending most of your time in Lab or outside is completely dependent on the career path you choose.
If you are interested in biotechnology or chip fabrication (Chips used in different electronic items like computers, mobile phones etc.) then certainly you have a chance to spend most of your time in a lab.
It depends on the speciality you are interested in, for a given field. For eg. if you select computer hardware, not all jobs are done inside lab. Though most of the technical jobs will be desk jobs, but if you have a specific interest in chip fabrication, only then will you be able to spend most of your time in a lab.
Some jobs also require periodic visits to a lab environment.
To better answer this question, you will first need to understand your liking and the field of work you are interested in. Once that is narrowed down, it will be easy to focus on speciality in that field, based on your interest (whether you want to be in lab or you want to be outside)

Where you work will be dependent on the field that you work in. For biotechnology you will be in a lab or facility with modern equipment such as bioreactors where we grow cells in very clean and controlled areas to maintain quality control. The labs are well designed and also involve working closely with other scientists. If you are a marine biologist or veterinarian you may work outside primarily.
