A dental hygienist is a licensed dental professional. My answer specifically relates to practice laws in NY State; licensing and practicing regulations may differ somewhat in other states, as in the level of supervision that a dental hygienist must have from a licensed dentist. Hygienists examine patients, clean teeth, give oral hygiene instruction, and administer fluoride treatments.
Dental assistants generally are not licensed; many will work chairside, assisting the dentist in clinical procedures. In some states they may take x-rays. In some states there are other "expanded functions"--regulations vary by state.
A dental lab technologist is involved in making crowns, bridges and dentures. There are certification programs, but generally licensing is not required. Labs generally DO need to be licensed.

Hi Morgan. I am a registered dental assistant and have been working for three years. I can provide some information of these three title jobs in California, but they may have differences in other states.
First of all, all these 3 title jobs are licensed and have different levels. For example, dental assistant has these following levels with different job-focused: dental assistant, registered dental assistant, and registered dental assistant extended function. The main job of a dental assistant is setting up rooms, assisting dentists in executing the procedure, polishing, taking x-rays, taking the impression, sterilize the rooms and instruments, and so on.
As for dental hygienists, the main job is oral inspection, oral hygiene, and educate patient how to maintain their oral health.
Dental technologist mostly works in a lab, and making prosthesis, such as a crown, denture, night guard.
