Motivation is something that can be hard to find in moments of stress. Though there is no immediate solution to this, I believe that motivation comes part with balance. I would say that one way to keep you motivated is to set yourself small goals. There is nothing wrong with being ambitious, but it is definitely easier to stay motivated as small goals are achieved and slowly accumulate to bigger forms of inspiration. Also, even when you feel like you tried really hard in assignments but you feel like none of the work you make can satisfy you, reward yourself. If you directly give up since you don't find the right way, all that negativity will keep accumulating. Instead, think about how much effort you have put into it, and understand that you might need a break. After hours of thinking, writing, and analyzing, a small break can definitely boost morale. Lastly, think about why this would be important for you, in the end, if you are not interested chances are you are not motivated enough. So, look at what aspects of these situations you can learn from. Hope that helps.

I find it very helpful to write down your goals and have a "why". It is important to determine why you want to achieve the goals you have set for yourself. If that is not defined, then it may be easy to forget why you are working so hard and give up. Having a list of goals that you are able to physically see everyday is also a great way to hold yourself accountable.
