Extracurriculars can be an important resume addition to your schooling and work experience. They highlight your ability to 1) take on additional activities and balance demands 2) can involve leadership positions and skills and 3) showcase you as a well rounded person. When looking for jobs, people will look at your resume for your academic performance, but they will also want to see your interests and how those can align with your future job and your future coworkers interests.

Don't worry about adding more activities just to make your resume look better. Working 15 hours a week while studying full time is a big achievement you should be proud of. It shows future employers that you are dedicated, hardworking, and able to handle more responsibilities.
Instead, spend time on activities that make you happy and thankful. These are the important qualities that will help you succeed in anything you choose to do in the future.

I think it is important to highlight any activities/clubs/projects that might be applicable to the role that you are applying for. As an engineering student, if you have any things related to that, I would definitely add to the resume such as clubs or projects.
