Purdue University - their Computer Graphics Technology program is certainly one of the best in the nation.

I studied computer science at the University of Michigan, but while I was there a new school opened up called the "School of Information." I know of a few people who studied UI development in that program and now hold positions in the tech industry as designers or developers.
