What are the most 'niche' jobs you can get as a biologist?
I am just curious about all the fascinating and obscure studies going on in the field of biology, and maybe it will give me a more specific goal in mind than just 'biology.'

I am sure you have heard many times how versatile a degree in biology is and how many different careers are open to you.
I don't know about "niche", but here are some options:
Marine biologist
Wildlife biologist
Physician
Biomedical researcher
Dentist
Forensic scientist
Genetic counselor
Microbiologist
Zoologist
Veterinarian
Lab technician
Food scientist
Pharmacologist
Ecologist
Science communicator
Agricultural scientist
Environmental scientist
Toxicologist
Nanotech researcher
Geneticist
Also, keep in mind that a bachelors in biology is only a first degree. If you want to get a masters or PhD you'll have options to specialize or even change direction.
I would recommend that you look up some journals or conferences for biologists and find out what people in biology are busy doing. You don't have to understand everything (you won't). Just look for some topics that spark your interest and then find out some more about it
