Hi Aiyana,
I think environmental science or environmental engineering would be great. It's very interdisciplinary and gives you fundamental knowledge in chemistry, biology, ecology etc. Other options would be chemistry, chemical engineering, ecology or toxicology.
For you gen ed classes you can take reading and writing intensive classes, english, maybe environmental policy or government. An additional language would be useful for the international part, also world history.
