Prioritize the biomedical courses. Your journey to becoming an orthopedic surgeon will require over a decade of education. The first chunk of that education will be some sort of bachelor's degree tied to biology, chemistry, biomedical sciences, etc. The more experience you have with this content in high school, the better you may perform in your future college classes. If you have the option to take AP courses (e.g., AP Biology, Chemistry, Physics, Calculus, etc.), do it. Schools may require certain scores (4s or 5s), so look into colleges you're interested in to see what AP scores you need.
Health science classes wouldn't necessarily be a waste of time, but focusing on hard sciences and math courses would be more relevant to your future coursework.
