How to take a broad Major and narrow it down into a stable and secure career path?
I am currently entering the Creative Technologies Major at UC Santa Cruz. It is a relatively new major and has not been around for long so I know I wont be able to get a lot of hyper specific help. The major has many different pathways to follow and I'm excited to see where my passions and knowledge take me, but I'm growing a bit concerned as to where I need to narrow down my career. I know that internships and project opportunities are a great start and once I begin classes next year i will be looking further into what is offered. Id just like some advice as to finding what's right for me inside the major and how to get there.

I think you're the expert in this situation. You know the specifics of the curriculum, and you'll see what you resonate with and where you excel as you go along--and there will be your path. Focus on your foundational studies and think about the assignments you enjoy most, and how those might direct you. And stay open to possibilities.
It's tempting to try to figure everything out at once because starting anything new can be scary and we want to feel like we're in control. But I think you're just going to have to take it one course at a time, one day at a time, work hard, and think about ways to apply what you're learning. The good thing about your program is that it will strengthen your creative problem-solving skills, and that's exactly what you'll need to figure out your career path.
Hope this helps, at least somewhat. A big task for you is to learn how to get accustomed to unknowns and to be flexible.
Enjoy your studies!
