I have been researching chefs and head cooks for a school research project, as I would love to pursue the career one day. Just how is the day structured, essentially?

It depends on the job you have. There are various jobs and stations in a kitchen, especially in a large company. In smaller places, you have to do many jobs. As a head chef, you must be able to perform all the tasks in the kitchen.
You need to learn what you like to do, then see what positions there are that need those skills. I wish you luck.
