Hi Jacob,
I can't speak to all jobs, but I must say that the job I have provides me with a lot of flexibility, but the is also structure to it as well. I work for a technology company where we develop firmware for business computers. I'm a manager of a team of people who do firmware build, test, and release. I meet with my team to help them with issues so they can deliver on time, so there are some due dates, but I have a lot of flexibility on what I do and when. You will find that with a lot of software development jobs, but everyone is concerned that AI will take those jobs away - I actually don't think that will happen as long as you learn how to work with AI.
My son is a doctor - he has a lot of structure, but there is some flexibility; not as much as I have, though. I think that is pretty common with the medical profession.
A lot of business jobs are very structured, but don't have a lot of flexibility unless you're the owner - it's tough to start out there, though.
I think you need to think more about the job you want to do - the job that you can do for hours, and it only seems like a few minutes. I'm guessing that structure is easy to find, but flexibility is something you can work your way into flexibility in due time assuming the job allows for it at all.
I don't know if I helped or not. I hope others can give you their perspective on other jobs.
Good luck to you!
Take care.
