You’ll get a lot different answers but for me, it would have to be the organization of parts such as bolts and keeping track of the specifications and procedures when tearing down engines the first time. After a couple times you’ll have a system in place but the first time I’m doing heavy engine work on an engine I’m not familiar with , my work bench looks like blue prints with a lot of labeled parts and my phones picture library is filled with videos and photos of the before and after . It can be very tedious work the first couple of times
