What is it like working on Capitol Hill as a staffer?
I know that the job is often shifting, changing, and exceedingly busy, but what is the actual workload? What do you come to work every day expecting to do?

The workload all depends upon the member of Congress, her or his priorities, how the staff is organized and the personalities of the other members. And how long they have been doing the work.
The member of the House from your district will have at least one local office in your area. I suggest you visit that office, perhaps make an appointment, come prepared with questions, such as those you proposed with your original question, and get as many questions as you can answered.
You may want to ask about volunteering at the local office as a gofer. It just may give you an even more in-depth look at the roles and duties of a congressional staffer.
