I think it's probably best to move to a bigger market, such as Austin to gain some advanced experience. Cities with a more developed food scene will help you learn in an accelerated way (access to volume of work, talent, opportunities, even ingredients to work with). The good news is, they are always hiring!

I firmly believe that you should do what you LOVE doing...period!! This question is tricky and depends largely on what is important to you. Is it more important to maintain work-life-balance or would you love to be the first to arrive/last to leave work.
