Consulting can be tough because clients often set the pace. When a project finishes, you might need to look for the next one, even if it's not entirely up to you. However, all the hard work will help you gain valuable experience for future jobs and give you new insights.

Remember, everyone's experience is different, so take advice with an open mind. I believe the best way to learn about an industry is through paid internships.

Nursing is one of the fields with high demand but when you are planning your own career please do not just choose a profession based on the demand if you do not like it. You are planning a lifetime and most importantly, you want to be happy. So, it is also important to review areas within high demand fields, for example, nurse anesthetists are in high demand and they are also high paying professionals with a bit more control of their careers.
