Classes on environments or drawing perspective can help with interior design or architecture. Illustration classes can broadly build skills for advertising, marketing, fashion illustration, book illustration, and more. And of course, classes on learning the basics like color theory, lighting, movement, and forms will serve as great skills for any path in the arts.
That said, keep an open mind to how non-art classes can make you a stronger artist. A biology class on human anatomy can improve your understanding of how to draw the body in motion. An anthropology or literature class can expand your world view and help you design characters with rich backstory. A communication class can help you be a better speaker or writer, which is a skill that artists of ALL trades need to build (we have to be able to explain our vision, whether it's our own portfolio of personal artwork or a pitch for a client)!
