Basic Skills
Meat, Poultry , Egg & Fish. (Quality Checks)
Vegetable Sanitation(Temperature checks).
Kneading the Dough.
Knife Skills.

Once you advance Basic Skills , Its time you know master in your kitchen station
Bake a delightful dessert (Begin with Choc Flavors)
Make your own salad dressing
Roast veggies to perfection ( all veggies require certain temp to get it right ) ...
Grill chicken that's actually flavorful,
Learn to brew the perfect coffee

It really depends. Sometimes you can learn on the job with the right restaurant or being under a chef that is willing to help and teach. Additionally, there is also Culinary programs that teach basic and advance skills to having in the kitchen.

There are classes that you can also take online through Rouxbe or America Test Kitchen they have some great classes including knife skills.
