Melissa. A lot! If you really love cooking, a crazy life but fun this might be your career. You will work weekends and all major holidays. I would have to say that 60 hours a week are the average. When I was a executive chef in the hotel/resort business I was there about 80 hours a week.

I always admire those who know what they want to do in life and have found their calling - kudos to you!

I'm not a chef so take this advice with a grain of salt. I have read and heard that being a chef is a long hard road and it has been historically much more difficult for women. If you want to get a sens of what it takes I would recommend reading Anthony Bourdain's book Kitchen Confidential. My intention is not to discourage you but to give you a clear perspective of what you'll be dealing with (he occasionally talked about his experiences in his TV show.)

Another option - if you haven't done already - is to intern in a restaurant (I have!)
