I worked on a farm for years working primarily with horses, pigs and cattle. I cannot remember ever getting hurt. With that said, you really have to be intentional about safety.
I have seen more than one news interview where the interviewee receives minor injuries. It typically involves cats.

It really depends on the project you are in, the research areas, and maybe the animal you are researching. I once volunteered fulltime as a marine turtle research assistant for a couple of months in a village in Malaysia. I was never in danger, and the only thing that happened was me getting a flipper-full of sand in my face from a nesting turtle when I was measuring it. If i were you, I would research the area that you are going to and just be prepared for any emergencies.
