what do I need to know and do to become a chef? what experience do I need to have work for a catering company and one day open one of mine own?

Thank you comment icon Tyquan, Find a restaurant or caterer that you enjoy. They're almost always hiring. Learn by doing (and getting paid). Be eager to learn, ask questions, dive in, and you'll be irreplaceable. Starting your own thing might not be a long way away, timewise, but experience-wise, you're better to learn in someone else's kitchen than in your own. Good luck! Garth Clingingsmith

You don't really need any experience, just a willingness to learn. Also a strong work ethic, goes a long way

You don't need any experience to work for a caterer or restaurant. You need ambition. Find your self an entry level position at any restaurant. Bus boy, dishwasher, or prep cook. Tell them you are will to learn. When you apply your self you will quick move up thru the ranks. If you find that you really like the restaurant business, think about applying to take some cooking classes or enroll in a culinary program near you.
