Honestly, a hiring manager is unlikely to care about what school you went to. If they do, it's more likely to be because they went to the same school, not because of the school's quality or reputation.

I think the theory you get from classroom learning is important, but it will be pretty much the same at any school. With the background you get from any classroom, you're going to learn so much more from real work experience and that's going to be so much more impactful on your resume than the name of your school. A school with an internship or co-op program is probably the most important criteria for you to consider.

There are many great engineering schools! There are likely some near you. My advice is find out where employers are hiring. Perhaps think about what type of company you would like to work for and then research at what college does that company spend most of its time recruiting engineers. I went to Auburn University and I have friends that went to Georgia Tech. Both of these schools have a high placement rate for engineers at great companies.

There are a lot of different ways to determine the rankings of a particular school. According to US News Report (which is just one raking) the best engineering schools can be viewed at https://www.usnews.com/best-graduate-schools/top-engineering-schools/eng-rankings. But just because a school may not be on the list does not mean that the engineering program is not a good one. You want to research the quality of the faculty, equipment, lab facilities, research opportunities, number of facilty, etc. Big schools often give you the most options within engineering but a smaller schools will give you more personal attention.
