Based on your preference for independence, a relaxed pace, and structure, the top three job roles that might fit your criteria are:
1. Freelance Writer or Editor: This role offers significant independence in choosing projects and setting your schedule, allowing for a relaxed pace that you control. It also enables you to create a structured workday that suits your personal and professional needs, making it ideal for someone who thrives on autonomy.
2. Software Developer (Remote or Flexible Working Arrangements): With the tech industry's trend towards remote work and flexible schedules, this role allows for a high degree of independence. You can often manage your pace of work, provided you meet project deadlines, and the nature of software development requires a structured approach to problem-solving and project management.
3. Librarian or Archivist: These positions offer a structured environment and the ability to work independently on various tasks, such as cataloging, research, and community engagement. The pace is generally relaxed, with specific busy periods depending on the setting (e.g., academic, public, or corporate libraries).

Any of the freelance industries might be a good fit here like Journalism or photography. I studied Journalism in college and worked alongside quite a few experienced journalists in the industry and they all worked best being independent and free thinking
Thank you, Chris for the advice.
