As an interior designer, is it possible to have various projects around the world- If so how would someone get to that level? ?

Absolutely! It could be fairly overwhelming depending on what specifically in Interior Design you're focused towards but if you are in the 3D Modeling/Drafting side of it, a lot of the time it will be remote work and that's very easy to balance home and life as well as multiple projects.

There are some companies however that while on contract work with them, they may prohibit you from taking on other projects with other companies. This is not as common in the design world but not completely out of the realm of possibility.

Yes. Actually most big firms do that. When you gain a repuatation and have connections people will want to hire you. The interior design ans architecture field is a lot of times global not local.
However you don't need yo be a big firm to get to the level where you are hired at an international level. You can apply for global architecture or interior design competitions yourself. There are a lot of them. Some are just competiontion for design and others are to be built, those will sometimes require your presence on site for some time, so keep that in mind. Also know that interior design enters as a category under architectural design so most competitions are architecture competitions with an interior design element to them. Exclusive interior design competition exist as well though I would imagine.
