Choose a restaurant that serves food that you aspire to prepare one day. Do some online research about their reputation etc. Ask to speak with the Chef about an opportunity to learn.

Hay Kurt, You never know if a restaurant is great or not , it all depends on ones opinion. The food may be good or bad ,the staff maybe good or bad ,the service, location ,price, and many other factors that makes a restaurant great or not. You can only know if you visit eat, ask about it from people that have experienced the establishment. Could be the staff or the customer. If your looking to work in a great restaurant ,you must work in several places to compare and find out what you think is a great restaurant. If they cook what you like to cook ,it can be a good restaurant or if they pay well, have a friendly staff, easy commute, good hours and good operating policy for the guest and staff it would be a good place to work. take your time find the right place you think you're going to be comfortable and help you learn to move up in the field. Don't settle and move around until you find a great fit for yourself and help make the restaurant great on your own. Good luck and happy cooking.

You will know if it's a good restaurant to work at if the staff has been there a long time. Ask questions about how the owner and the chef treat the employees. Also look online at the Health Inspection reports to see if there have been violations. This will tell you about the cleanliness of the restaurant.
