Hi Chelsey,
I understand this so much and sympathize. It may not make sense to you at first, but a way to enjoy your art classwork again is to do more art on your own, just for fun and just for you. Art class isn't like math, where there are right and wrong answers. There are still ways to measure your work for grading, like how well you follow directions and show your understanding of the problem you've been given, but there's also a lot of wiggle room in there for you to figure out how to make the assignment fun for yourself. If you can figure this out for art class, you'll have developed an important life skill that makes all sorts of other anxiety-provoking or boring but necessary tasks manageable--and maybe even pleasant. And when you do your own art more, you'll develop skills and gain more confidence in your assignments.
I hope you find a way back to enjoying art again. I think you can do it if, when you sit down to work, you look back to 7th grade and remember how you felt when you had fun drawing or painting or whatever medium you liked best.
Hope this helps!

To rediscover your passion, try visiting galleries, art museums, and public art displays. You don't need to stick to "formal" art; explore creative store windows and street art too. Find what catches your interest. If you can, keep your art supplies nearby so you can easily work on a project whenever you have a few minutes. Carry a sketchbook and pencil in your bag to doodle while waiting for the bus or before class starts. This way, you're creating on your own time, not just when told to.
In class, if an assignment feels boring or stressful, take a deep breath. Go into "auto pilot" and let your hand do the work. These tasks might or might not help your future works of art, but you'll only find out by completing them. And when it feels really hard to get through an assignment, remind yourself that 8th grade is only about 20 more weeks. You got this!
