What is the biggest challenge a non stem major might face applying to medical school post graduation from college?
I am thinking of taking only pre-requisite courses to apply to medical school and major in a non-stem area. I’m wondering if I will face any challenges to the medical school curriculum if I follow this path.

In my opinion, there is no reason not to major in a non-STEM field as a pre-med student. As you say, you will need to take --and do well in-- all the courses needed for medical school applications so be sure to work closely with your pre-med advisor to ensure the classes you take are the ones any medical school you will be applying to require. But beyond that, if there's a subject you are interested in and can get good grades in, go for it! There is really no preference by medical school admissions committees for STEM or non-STEM majors, all other factors being equal. Having another area of interest and expertise can help you stand out and bring a desire different perspective to the entering class. Although I majored in biology, I have friends from med school who were ethnomusicology and ethnic studies majors. Best of luck!
