Excellent question! When I am looking for local businesses to support, I search for several things....I make sure that the products/services sold meet my interest/need. I want to make sure that the price is right. Next, I check to make sure that the customer service is amazing. So, for you wanting to start up a bakery, I would ensure that your products meet the needs of your perceived customer base (unique and delicious flavors). Also, ensure that your products have a competitive price - do not over or under charge, but make sure that your customers see the value in your product and WANT to buy it! Many people (I am one of them) would rather pay a little more to support local business, than less at a big chain. And lastly, make sure that your customer service (whether it is solely you operating the business, or you have hired help) is impeccable. Often times, even if the product is amazing, if the experience is poor, you will lose customers. Word of mouth is huge! I hope this helps! And good luck!

Think about who your customers are and what/ why they are coming to your cafe:
Let's say your opening a cafe in SF for college students/ young professionals, what do they value? Probably fast service for on the go, solid drinks menu with cute specialty drinks, nice seating areas to sit for hours for study sessions/ late night working.
Change your environment to fit your customer's needs :
- Easy way to cater to your customer is to adjust working hours- open and close later.
- Transition drinks from afternoon coffees and matchas to red/ white wine in the evening. Maybe change afternoon snacks to a few dinner options (easy ones, like sandwiches & salads so you don't necessarily need a full kitchen).
- Toggle the music for the ambience- maybe lofi for the afternoon and transition to soft jazz at night.
- Get light bulbs that can change hues- brighter in the afternoon, cozier at night.
I'd also love to open a cafe in the future. Write a list of what/ why Peets & starbucks are successful, and things you wish they did. Make sure to hit all those "successful" buckets first and add on your list without breaking your bank. Think about the people around your cafe location - who are they and what do they want? Why do they go to a cafe (beyond just getting a cupa)? If you have good answers for these, then I think you're off to a great start. When it opens, ping me the address. :)
