What was the first step you can take to open up a restauraunt? How long does it take to do so? Would you recommend the Culinary Institute of America as the go to school?

I'm a 17 year old going to job corps, and my dream is to become a chef/head cook. I know what I want and when I want it. It's just a matter of how i obtain it.
Please, any advice can go a long way.

At 17 Years old.. You need experience. Experience the best and worst. Learn what to do and not to Do. You need money and cash reserve. You don't need accounting if you can afford a cpa. Simple math works. But you need to know is strong work ethic, consistency, marketing, identifying your demographic, learning to fail, and cost analysis. I would work at a resort or high end establishment for 5 years before opening your own.

Hi Ernesto!

If you're looking to open your own restaurant, you'll also need to take business/accounting classes. When you own the business, you have to make sure you're profitable and manage your cash flow. Then I would also look for a mentor who runs a restaurant near you, because you're going to want to have someone to bounce ideas off of and talk through the inevitable issues that will come up.

I am not a restaurant expert, but the best option is attend culinary school. When you graduate, work at a hotel kitchen. You will gain the experience you need. You will start as a line cook and then work your way up the ladder to executive chef.
