Sam’s Career Goals

I’d like to learn more culinary skills and prep cooking, including cutting, portioning, mixing, storage, preparation of ingredients. I started in fast food at 16, worked many hours, eventually being able to hold my own on BOH line 5-7 nights a week, and began management work as the Assistant GM by 18. I’d like to stay in the restaurant industry, but advance my knife skills specifically and using fresh ingredients, as there isn’t as much practice in those areas when working high - level produced food chains.
