First, start with Teklemuz's answer, as there are so many items you will need to tick off.
The only thing I would add is the importance of your first sentence. Craft it in such a way that it basically writes your entire essay. In other words, if the first sentence is a good one, all you have to do is just continue on.
I think you have to keep in mind that this situation is really a competitive essay "contest", and you have to come through better than your opponents. I would write, perhaps five essays, figure out an exact word count, and practice and practice before you write the ones that count.
And I notice you have asked second query. This is the one I chose to answer.
