For my work, AI is used to pull together information from multiple sources into one outline. We have multiple programs that contain customer information, meeting notes, etc. and AI can pull it all together to summarize rather than sifting through endless transcripts and data.
While I don's use AI for every email or communication, I do use it to check my grammar and tone when sending out sensitive messages or addressing executives.

At my last job there was a workflow that used AI as an engine for it. You would need to operate a machine in a specific order and if you did one operation it would give you the expected result of the action, if you got a different result it would give you emergency steps to finish the operation and then troubleshooting steps to diagnose and resolve the issue.
Right now most people I know are using AI for emails, grammar, editing, and the same as a lot of us like google result summaries. Sometimes when you are working in an org and you need to get something polished done quickly, AI is kind of the best tool to start with. You can put jumbled ideas, pre-existing documents, and examples into a prompt and then ask for something coherent in response and get a decent but not lengthy email written quickly. When working in a large org sometimes you need to respond to surveys and performance reviews, fluffy things like career growth questionnaires and AI is a LIFESAVER for these! I have stressed hours trying to say "I want to learn linux more betterer!" where again I can make a vague list of things I need to improve on and something equally as good pops up in seconds.
Even on this platform, right after you make an entry the next screen pops up and allows you to edit your response using an AI tool. I know it is difficult for people to write sometimes (I really do responses here to practice my writing!) and they want to best state and express their advice, AI is definitely helping with that! We live in a global job market and sometimes languages are learned spoken and not written. Sometimes you learn a language in a different country than the one you are using it in. AI is great for helping people better word and express what they are saying rather than requiring them to resolve their grammar issues before posting.

People will use AI in different ways depending on why they need to use it. Some people will use it to quickly gather information such as if you need to look up some information for a project you can use AI to quickly gather and summarize the information so you don't have to spend time with the research. Others may use it for creating websites.
AI is still growing so some of its functions may not be up to par with what most people expect, but give it a few years and it will improve drastically,

The most common question around AI are what are the application areas; however, there is very little technology today which is not at some degree leveraging AI be it for general automation, data connectors, coding, search functions, compilations, reasoning, design, just to mention a few.
Leading several AI product developments in my current role, I've learned mainly what is misunderstood around AI is how it functions which is why most stuggle to understand their own application areas, as well.
At home, I use it for everything from investment research quickly compiling overviews such as moving averages, plan trips to countries I've never been, to not only research products before purchasing but also identifying good offers.
Best advice I can offer to build an understanding of how you may shape your own AI usage is to simply begin asking everyday questions and identify the boundaries of where it makes sense for you to leverage AI.
