Jason’s Answer

My well is planned out by the Saturday before. I know what my prep is going to start out with and I know what my buying strategy will be. You can never predict fully what you will be doing. I make most of the decisions for the restaurant. I have 2 prep cooks that take care of most of the prep. We have an executive chef and I’ve trained 4 dish crew members who can assist and make the restaurant move forward. Be the best team mate you can be, show you can help get things moving forward and always ask about specs. Chefs often have ideas, but depending on the restaurant, have ideas brought to you may keep away the mediocrity! Note; not all chefs want outside ideas. Not all ideas are great in execution, don’t become upset if something doesn’t work. Keep at it! I’m lucky and my bosses (the owners of the restaurant) love ideas from all sides! Remember that a lot of days become unpredictable due to the many variables that come with working in a restaurant.

Niki’s Answer

It's funny that you say "day" when I think of the restaurant industry, I hear that it is more about "evening work". My son who has worked in this industry for years has shared that before a restaurant opens, the whole shift of workers gather together, learn the specials for the night, sample & taste the food, provide feedback to the chef /cooks , and then are able to speak about it every time a customer asks about the meals and their favorites.

Niki recommends the following next steps:

You could shadow a local chef to see their daily/night routine.
You could work at a bakery to learn how the business side works.
