I would highly encourage you to work within a restaurant (even if it is part time) while you earn an appropriate degree.

I started a catering company after I graduated, but I had worked every position within a restaurant and could guide/coach those I was managing.

Actually, opening a catering company first could allow you to grow your name without having a physical building (you can rent kitchen space). Your overhead will be far lower and you don't run the risk of investing too much early on.

It can be hard work, but I think it can also be rewarding.
