Realistically, what kind of job positions are open to those who major in communications?
I am really interested in going into a communications major but do not know what kind of jobs it yields other than "public relations." What tasks or projects people work on in their communications related jobs?

Per my experience, can apply for these jobs: Communication Community Specialist, Employee Engagement, People Project/Program Manager, Social Media Manager, and so on.
Communication skills are very important during daily work, when you want to push the task forward.

Do you love writing? Teaching? Creating content like videos, audio, articles, or posts?
Are there topics that ignite your passion, such as wine, hospitality, orchestral music, science, research, or business?
Explore business sectors that excite you and look for communication opportunities in those fields. I began in entertainment marketing and then explored other sectors that intrigued me. I've gained so much by creating video content for various organizations and companies. Each project opens up new, exciting knowledge and introduces me to fascinating, smart people.
Dive into what excites you and follow those paths. You'll discover so much along the way.

I think there are several directions you can go in with a Communications major. If you're really drawn to communications, you must like expressing yourself to others, whether it is through art, writing, video, or other methods. I can picture a Communications major going into all kinds of roles - you could lead the marketing department of an organization, so the organization's message reaches its intended audience. You could also become a journalist if you enjoy writing and investigating stories about people's lives, world events, and other newsworthy stuff!
These days, some communications majors become digital strategists, who develop content and marketing materials for a website or organization. What's nice about Communications as a major is that it's very broad, so you have a lot of flexibility for your future career choices. If you wanted to start your own company or freelance your services, you could do that. For example, if you want to be a digital strategist for an artist who needs your communication and promotion services, that could be a good role for you.
What interests you the most about Communications? Once you find the area that really interests you, it's easier to create a career plan.
