Most schools and health systems value well-rounded applicants. Therefore, you can take AP History if you want, not just AP chemistry, biology, or physics. The important thing is to get a strong GPA and solid test scores, while assuring you also enjoy your time as a student. It is a difficult, but necessary balance to work hard enough - but save enough time for your own well-being. Sleep, exercise, do extra-curricular activities, even if that means taking one or two fewer AP classes.
I will add that I hope you keep your mind open to other careers. Anesthesiology is great, but try to explore other areas of healthcare and medicine while pursuing your goals.
