I've come to the conclusion that I am a jack-of-all-trades. I don't like sticking to one thing, I like to try new things. How can I satisfy my need for exploration and new situations while making a stable income?
Things i'm interested in:
.psychology
.theatre
.child education
.book writing/author
I need help because I'm down to try everything, which I don't see a problem with, I just don't know what I should do to have a good income.

Have you ever heard of multipotentiality? It's a term used for individuals who quickly learn and absorb skills. They are adept deep dive researchers and inquisitive by nature. However, when the information they are looking for is exhausted, they'll quickly move on to another interest or skill. The wonderful thing about this type of individual is their ability to morph knowledge into something new and different.
From reading your self characterization, you may fit this personality. If writing comes easy to you as well. Seek careers oriented around social sciences and research.

It’s wonderful that you have so many interests! Some of the most interesting people I know are just like you. But each of these people have ‘regular’ careers as a way to earn a living, and as a way to fund their other activities and interests.
From a career standpoint, your interests aren’t really all that misaligned. For example, you could consider a career in child psychology where you work at a school. In your off-work hours you could write children’s books with a focus on child psychology needs (grieving, self image, etc.). Or maybe you prefer to author articles about child development and psychology.
Or you could major in journalism and do reporting on children’s issues.
Theater is something you just do for fun!
Selecting a course of study and a degree will offer you a way to support yourself and your family, but it does not, and should not, limit your options or detract from your passions. And regardless of which path you take, it doesn’t need to stifle your sense of adventure or desire to do things you enjoy.
Select a career starting point (for example, child psychology or counseling. Or maybe journalism )
Through internships, mentors an others, find out all the jobs you could take with this degree. This will help with your first job.
Make contacts with people who are willing to mentor you. Not just for your career choices, but writing and acting too.
In college, get involved in research projects that help you expand your options.
