I am a chef that upholds my values to my guests and employer. I have been taken advantage of, created systems of operations that lead to success, and know the game. We talk about passion, molecular gastronomy, and being the best. But we do not talk about the freedom to be happy. And I've realized we can't always be happy. But one thing I can tell you about myself is that you learn something about yourself as everyday goes by. I do me, I learn, adapt, and take chances. "Uncertainty is certain".

In layperson terms, what do you actually do at work?

I eliminate liabilities, construct efficiency, provide excellent goods/service, and stay true to my principles and morality.

What is the one piece of career advice you wish someone gave you when you were younger?

Nothing good in life comes easy, everyone has their own agenda, make sure you do what you can to follow yours.

How did you pick your career? Did you know all along?

I chose my career because I found out I was good at it. Find your strength and go with it. If you try and turn your weakness into your strength and succeed, you can do anything.

What is the biggest challenge you had to overcome to get to where you are now professionally? How did you overcome it?

My biggest challenge was myself. I am where I'm at because I took chances, failed, learned, and never gave up.

What is it like when your job gets tough?

The only time your job gets tough is when you start doubting yourself. The moment you don't trust yourself is the moment you think you can't break a board even though it's 2mm thick. Life is tough. Deal with it. If you fail, learn. If you succeed, embrace it. You are your only enemy.

Did anyone ever oppose your career plans when you were young or push you in a direction you did not want to go?

Yes. My parents. But you know who didn't oppose my career plans? Myself. You can't have bad without good. You can't have opposition without apposition.

When you were a student, did you do anything outside of school to build skills or get knowledge that has helped your career?

I did. I realized school is like giving crayons to van gogh.. Even given what's given, nothing is like the real thing. Work for free, stage somewhere and earn your stripes. School is a foot through the door, and that's all it is.
