Opportunities/Advice for Junior Illustrators?

I'm really lost on how to get any opportunities as an illustrator with very little experience. It seems I can't find a place where they'd take a junior illustrator without job experience that's remote, cause in my country there are like no opportunities at all for illustrator. Before I got my degree my professor's would often say how it's a bit hard but there were jobs out there for us. These days I wonder why did I have to choose a career that has so little employability in my country. I seem to always be making poor choices for my professional future. Any advice would be appreciated or if you know a place that's hiring illustrators with no experience, please let me know. I'm also thinking about trying to apply for graphic design internships since it's kind of similar, but obviously not the same...

I'm looking to major in Illustration and just recently got accepted to a few schools; some just regular universities, and others being legitimate art schools. Should I pursue photography and other careers within the art industry or steer myself towards law, politics and sociology?

I am a student in the UK and I am an aspiring photographer, I also have interests in art and would like to venture into other careers of the art industry, such as illustration, graphic - design. However, I am unable to truly talk to photographers who are willing to take interns or have someone shadow them. I have contacted several and in the hope of receiving a response, yet I have not gained anything and have tried numerous times. I also am currently in year 12 in UK education system doing my as exams, and US equivalent is grade 11; I'm intrigued by sociology and politics, and considering to venture into that side as well but I am unsure which one I should pursue as I have equal amounts of interest for both. I am very excited to be going to college soon for my bachelors degree in fine arts with an illustration major. I am doing well in school and have had many people say that I should have chosen a different major that will be easier to find a job in.
