Being Head Chef of your own business or for someone else's business is a big goal. With developing experience, I want to know what is a good way to take those risky step and fall in the decent situation if it goes bad, financially.

I am new to building a proper career, I'm aware that certain programs or other job programs like Conservation or Job Corp. I want to know the right ones to go too.
What could be some little steps for starting your culinary career?
At the moment, culinary is my best shot at taking steps toward a long-term career. I have somewhat food work experience and E-food handlers certification, currently Job Corps is going to help me get what I need to continue the progress. The thing I'm worried about is what can I do after the straighten up.

In order to learn authentic Italian cuisine should I take a short term course in Italy or should I try to get an unpaid apprenticeship if in the field?
I have worked in this industry for over ten years but in various cuisines like Indian, Chinese, Arabic and lastly in Italian cuisine. Among these, I love to work with Italian cuisine and I’m very much passionate about it. I would love to become a professional chef who specializes in Italian cooking. I have done a one-year diploma course in professional cookery level 2 and I have basic knowledge of Italian cuisine.
